I don’t know about you, but I’ve always loved KFC original recipe chicken. However, now that I’m older, everything I eat thats fried seems to stick to my middle. So for me, no more fried foods allowed on my daily diet. I mean, once in a while, sure. You’ve got to treat yourself sometimes.

Yesterday, I had a hankerin’ for some chicken wings and I wanted the “KFC” style flavor that I love so much. I am in no way saying that this the Colonel’s secret recipe. It’s just a recipe that I’ve formulated over the years that comes pretty close flavor wise and I love cooking chicken this way. You get all the crispy deliciousness without any of the guilt!

 

KFC Style Chicken Wings

1-2 lbs of Chicken Wings (Drummies / Flats) – rinsed and patted completely dry

Baking Sheet, Aluminium Foil, Wire Cooling Rack

4 Tbsp Baking Powder

1/2 tsp EACH

  • Celery Salt**
  • Dried Basil
  • Garlic Powder
  • Dried Thyme
  • White Pepper
  • Black Pepper
  • Paprika
  • Lawry’s Seasoned Salt**
  • Oregano
  • Ground Ginger
  • Dry Mustard [I didn’t have any so I left it out]

** If you are trying to keep your salt intake low, you can substitute No Salt Seasoning / Celery Seed**

Cooking Spray (Your choice – I use either Olive Oil or Coconut Oil)

Preheat your oven to 425 Degrees (F)

Use a large baking sheet covered with aluminum foil (to keep the mess to a minimum) then set a wire cooling rack on top. This will elevate the chicken above the foil which will allow for better air circulation during cooking which in turn means the chicken cooks more evenly. Spray the rack with your favorite cooking spray to keep wings from sticking.

Rinse then pat dry your chicken wings with paper towels and set aside. I typically use a baking pan lined with paper towels, dry the wings, then cover them with paper towels while mixing my dry ingredients to be sure the wings are nice and dry before “breading” them.

Next, in a large bowl combine dry ingredients listed above and mix well. Pour your seasoning mixture into a large zip top bag. Add 1/2 the chicken and shake to coat well. Remove the “breaded” pieces and place on the greased cooling rack. Continue this process until all pieces are coated and placed on the rack. Discard any remaining seasoning mix.

Spray the chicken pieces with cooking spray on top to assist in the crisping process. Place baking sheet in the oven on the middle rack for 30 minutes.

After 30 minutes, flip wings with tongs, spray the other side with cooking spray and place back in oven for another 30 minutes.

Your wings should now be crispy, crunchy and delicious. You can coat them in any type of sauce you wish, but these are soooooooooo good that sauce is definitely not a requirement.

One final note: make sure that you make enough wings for about 12 per person if you are making these for an event cuz they will go fast! Enjoy!
