ROCKFORD — Beef-a-Roo has added a new sandwich to its menu for customers looking to embrace the spirit of St. Patrick’s Day.
You can stop at any of the eight Rockford area Beef-a-Roo locations between now and St. Patrick’s Day on Sunday for the corned beef and Swiss sandwich. The holiday special is served with layers of corned beef, Swiss cheese, Thousand Island dressing, spicy mustard and sauerkraut.
“At Beef-a-Roo, we take pride in delivering fresh, flavorful and affordable meals to our valued customers,” Matt Riddle, CEO of Beef-a-Roo, said in a news release. “This St. Patrick’s Day, we are excited to offer a taste of tradition with our limited-time Corned Beef & Swiss Sandwiches, and our Green Mint Shake is the perfect way to put you in a festive mode.”

The Rockford-based fast food chain, which now boasts 18 locations across the country, is also serving up limited time options for those who observe Lent.
Lent is a Christian holiday where observers traditionally abstain from eating meat on Ash Wednesday and each Friday during the 40-day period. Fish, however, is permitted to be eat.
Beef-a-Roo has a mahi, mahi sandwich served year-round with horseradish sauce, lettuce and tomato on a wheat bun.
From now until March 31, Beef-a-Roo has added a crispy cod sandwich, fried shrimp, and a Buffalo cauliflower wrap. The wrap is served with crispy breaded cauliflower, blue cheese, tomato shredded lettuce and Buffalo sauce.
Easter Sunday is celebrated March 31.
